    Nothing wrong with an insulin spike when you eat, as long as it goes right back down. This is what
    Dr. Spindler, prominent in the calorie-restriction field, believes is the mechanism behind the
    success of calorie restriction. Too much arachidonic acid (an "essential" fatty acid) in your body,
    and too much insulin. Too much free radical activity due to too much unsaturated fat, and the body
    is stressed - insulin gets released. So it's more complicated than you envision, but if you are keep
    calories low, carbs are okay, at least a good assortment of fruit is, for example. The complex carbs
    I'll leave to the "experts" to eat.
