With this week and next week being the biggest two weeks of the year for parties some of you may be
making that old standby, Chex Party Mix. Here is the recipe I use. It's different from the standard
recipe but everyone who tries it likes it.
6 tablespoons margarine
1/2 teaspoon salt
2/4 teaspoon italian seasoning
3/4 cup parmesan cheese ( this is one time where you want to use the dry parmesan cheese that comes
in a can, as opposed to fresh) 8 cups Chex cereal (2 2/3 cups each Wheat, Corn, And Rice Chex) 1
cup cocktail peanuts 1 cup miniature cheese crackers 1 cup mini pretzel sticks
Preheat oven to 250º F. Melt margarine in a 9 X 13 baking dish. Add salt, italian seasoning, and
parmesan cheese. Mix well. Add cereal and stir to coat. Add remaining ingredients and stir again.
Bake for one hour. Stir the party mix every 15 minutes while it's baking. After taking the party mix
out of the oven I usually split open a paper grocery bag and dump the finished party mix onto it so
it can cool faster.
