Thinking about buying one of these but without any maps installed. How easy is it to create maps for the unit? What's the best way to go about doing it for both road and off road? I'm based in the UK cheers

I suggest you read DC Rainmaker's review of the 810. He's got lots of information on how to get started with free open source maps.
