I'm looking at buying a used Trek FX1 for $300. I could use some advice on whether this is a decent price to buy for this model. It was bought 1 year ago, so I'm pretty sure it's a 2020.

A new Trek FX1 is about $540, so that's probably reasonable if it's in good shape. Bikes are very hard to come by right now so finding an amazing bargain is hard.
The one caution I would give you is to be sure that the frame fits you. When I was a teenager I stupidly bought a used bike with a frame much too big for me. It was never right and I eventually had to replace it.
