It's very easy to make your own buttermilk.
Use a nice fresh bit of buttermilk as your "starter" and add regular milk (I prefer skim or 1%, and
have used milk from powder with no problems). I use about 1 cup of buttermilk per quart of milk. Mix
and cover (I just put it in the milk jug that I'll keep it in) and set it on the counter until it
gets thick (wiggle it- if it still looks like milk, you haven't waited long enough). Placed near a
warm oven or ABM, this will take about 12 hours. Otherwise, up to 24 hours. When it's thick, give it
a good stir and refrigerate. When we're near the bottom of the jug, I repeat the process in a clean
jug. I've kept a buttermilk culture going for weeks and weeks this way.
