  1. Salt Baked Sweet Potato with Butter-Honey Spread

    Preheat Oven to 350 Degrees F.

    1 large sweet potato per person Coating: bacon drippings, shortening or Butter Spray 2-3 tablespoons
    kosher salt, per potato Spread: softened butter honey ground cinnamon

    Thoroughly coat skin of potato with bacon drippings, shortening, or spray with Butter Spray. Roll
    each potato in Kosher salt, forming a heavy salt coating. Place on a baking pan with at least 1 inch
    space between potatoes. Bake potatoes at 350 Degrees F for 45 to 60 minutes(until soft). Whip
    together butter (3 Tablespoons per potato), honey (1 to 3 Tablespoons per potato -- to taste) and
    cinnamon (about 1 teaspoon per potato). Taste and adjust seasoning. Split potato in half and spread
    each half with a generous amount of butter mixture. Serve Hot.
