I copied this from a local Italian restaurant:
Penne Pasta with Tomatoes and Bleu Cheese
4 - 5 Roma tomatoes, seeded and chopped coarsely 8 - 10 brown Crimini mushrooms, sliced 12 black
pitted olives, sliced 2 cloves garlic, chopped 3 - 4 large leaves sweet basil, sliced into thin
strips Parmesan cheese, freshly grated bleu cheese or cheese, crumbled
1/2 lb penne pasta
Prepare all ingredients except the basil. Don't chop the basil until the last minute or it will
oxidize and turn black. Cook the pasta. While pasta is cooking, saute the tomatoes and mushrooms
in a little olive oil. Use a large saute pan. When they've lost a bit of their moisture, add the
olives and garlic. Cook until just heated through. Drain the pasta and add to the pan. Remove from
heat. Chop the basil and add to pasta. Add some grated Parmesan and mix well, but quickly. Drizzle
some good quality extra virgin olive oil over pasta and transfer into 2 bowls. Top with more
grated Parmesan and a bit of crumbled bleu cheese or Gorgonzola. Serve with a green salad and
fresh focaccia.
