Stie-Fries & Baked Asparagus with Mozzarella
Servings: 5 Time for preparation: 1 hour
1 kg frozen or fresh asparagus 2 Tbsp olive oil 1 garlic clove 200 gr tomato sauce 2 Tbsp cooking
cream 3 dash curry powder
1/2 veggie spice cube 4 Tbsp Tamari soy sauce Tabasco 500 grams mozzarella 2 dash oregano
Cook frozen asparagus and cut them in smaller pieces. Heat the oven at 200 degrees Celsius. Heat
olive oil in the wok, add asparagus, stir-fry for a couple of minutes. Then add garlic, mix, add
tomato sauce and cooking cream and leave for a couple of minutes. Season with curry, veggie spice
cube, Tamari soy sauce and Tabasco, mix well and leave for a couple of minutes. Slice mozzarella.
Transfer asparagus sauce into baking dish, cover with slices of mozzarella, sprinkle with oregano
and bake for 15-20 minutes until the mozzarella melts.
