Chinese Smoked Chicken
1 Large roasting chicken 3 Tbsp dark soy sauce 2 Tbsp fresh minced ginger root 2 Tbsp fresh minced
garlic 2 green onions minced 1 tsp sesame oil 1 tsp sugar
Split the chicken down the back , (you may remove the back bone if you wish) Mix soy sauce , ginger
, garlic green onions , and sesame oil , coat the chicken with the marinade, and allow to sit over
night covered in the refrigerator.
Smoke Spice Mixture
1 cup of rice 4 Tbsp tea leaves ( I use jasmine or other Chinese tea, not green tea) 3 cinnamon
sticks , broken into small pieces 6 broken star anise
1/2 tsp cloves 1 tsp Chinese pepper corns (Sichuan)
2/2 tsp black peppercorns
* note (you may substitute Chinese five(5) spice powder for the spices) aluminum foil
Soak the rice for a few hours , drain, then mix in tea and spices. Make a tray out of aluminum foil
and place rice and tea spice mix into the tray . The smoking must be done outside in an outdoor
smoker or grill , I prefer to use charcoal for this myself , I just place the aluminum foil tray
with the smoking mix right on the coals , smoking time is about an 1 hour to
1.5 hours. you may finish the chicken off in the oven if you wish set at 350 degrees till juices
run clear.
