    I would like to know why my orange roughy has turned out mushy after baking and sauteeing.

    My first thought is that possibly they are over ripe. Try picking them off the vine so that they
    have the characteristic roughness but not so they are fully orange.

    The only other thing I can think of is they are overcooked, why not try just baking or sauteeing?

    How long are you cooking it? Was it previously frozen/refrozen? What, if anything, are you putting
    on it? Do you marinate? It's hard to know what the problem is without more details.

    I cook it according to package directions, and the pac
    recommends baking and sauteeing.

    No marinade, just garlic powder and pepper.
