I'm not familiar enough with the different types of eggplant
to give you an exact name -- but these are the kind you'd
use to make eggplant parmigiana, for example. Fat and round
on the bottom. Aubergine. Not japanese eggplant.

precise quantity is imperitive... just buy one that's nicely
plump, well formed, and unblemished, and use it all... I
would choose one that would slightly overflow an average D
cup... actually truth be known I'd choose two.

When all is said and done, and you really do mean just
diced, not a cooked measurement, you should just eyeball it.
My idea of an average eggplant probably would amount to a
couple of cups, but it's hard to say without seeing.

What recipe requires a particular amount of eggplant? Most
just say "one large" or something and what you dice up is
what you use. I doubt any recipe that includes it will be

Hi -- the recipe is for caponata and it calls for 7 cups of
eggplant, unpeeled 1/4 inch dice.

OB: food, on your comment above. I only like the eggplant I
grow myself. The stuff at the store is too mature for my
tastes and has a funky flavor, kinda harsh and peppery. When
I grow it, I cut it young and it's more sweet and tender.
Great dredged in spiced cornmeal and fried in EVOO.

As for beets, mom and dad forced me to eat them when I was a
kid and I still hate them to this very day! :-P I do however
love the greens! I'd get beets at the farmers market, cook
and eat the greens and let mom have the beets. The greens
are similar in flavor and texture to Swiss Chard.

One pound peeled and cubed eggplant equals
approximately 4 cups.

This part is from me:

When you're in the supermarket, weigh your average sized
eggplant. They provide scales Then figure from there using
the above information.
