I understand that "saltine" type crackers are made with some
kind of fermentation process taking several days. It's not
very doable at home.

I'm sorry to hear that your version doesn't -- what
edition/year are you using? I'm working from the '64 version
and there are several cracker recipes in it -- I hate that
they've taken away some of the basics in later editions.

I've got probably more than a dozen recipes for various
types of crackers; if you can describe in a bit more detail
what you're looking for, I'll be happy to see if I have
something similar and post the recipe(s).

Can you provide a link or reference on this? None of the
saltine/soda cracker-type recipes I have require any sort of
long-term resting or fermentation.

Do a Google search for "cracker recipes"- you'll find only
190,000 of them :-)
