Anyone else have a problem with their cleat screws getting stripped out from
the allen wrenches, and if so what can you do to prevent this from
happening? I really feel uncomfortable watching my landlord take a grinder
to my sidi'd 🙂

How tight do you put them on? I put lock tite and then
tighten them until I can't move the wrench.

Did you use the right sized metric wrench, and not just the closest standard
wrench? That'll do it quick.

Can you clean any caked-in dirt out of the hole? That's what we had to
do to remove my old cleats. Once the dirt was totally cleared out, it
was a piece of cake.

He's not screwed at all. It's mighty easy to use a dremel to cut a notch in the
bolt head and then use a screwdriver to back it out. No big deal. Done it
several times.
That said, our OP really ought to grease the the threads when he puts on new
cleats.

Almost every time I've replaced cleats, I've had to take my shoes over to my
friend's house to have the bolts drilled out.

When it comes to bicycle and bicycle-related fixin', a sawzall, monkey
wrench, and sledgehammer will get just about any job done.
You could also get a drill and, say, a 1/4" bit, drill through the
bolt's head until it pops off, and remove the threaded bit with
pliers.
