A Google search on electric knives got quite a few hits, most of them
trying to sell. However there was one review site:

that had some reviews posted. They recommend Hamilton Beach or Black
and Decker.

I'm just curious: What do you mean by "can no longer wield..."? You can't
hold a regular knife correctly, or control it well, or other?

Thanks for the reference. I found it helpful. I'm still not sure what
I'll do regarding an electric knife. I know I'll return the el-cheapi
one I bought (sigh).

I just remembered another good site for reviews. It's:

They have a cooking show on PBS TV. In my opinion, one of the best
cooking shows anywhere. There is an "Equipment Corner" with reviews
on the site. You have to register to get some of the information, but
registration is free and they don't pester you with a bunch of spam
e-mails if you opt out of that service. Their recipes are great too.
