Baby Octopus

  1. We've started shopping at a new Oriental market now since the old one is
    moving too far north. Nice too as their prices are better on a LOT of
    things! I found a package of baby Octopus (pre-cleaned) that looked
    interesting and was less expensive than the fresh ones at Central market.

    Octopus, unless served raw, has a tendency to be a bit tough so I took a
    hint from someone here about cooking it for over 20 minutes.

    Last Sunday, I made up a merlot wine sauce from Australian Merlot, 6
    cloves of pressed garlic, a little grated ginger, some black pepper and
    some dried grated lemon peel. I simmered the octopus in that on low
    (braised more or less) along with 5 sliced king oyster mushrooms for 25
    minutes. I then added sesame seeds and an arrowroot slurry to thicken.
    The octopus and mushrooms added their own flavors to the sauce so it was
    nice and rich.

    This was served over brown rice pressure cooked in some pork trotter
    stock I had in the freezer.

    It came out very, very good and the octopus was tender enough for my
    housemate to have no trouble chewing it. :-)

    I'll have to try that trick with squid.

    admonish me saying that they are too smart to eat, but if you use that logic,

    Shel' baby led the way to the whole Octopus intelligence question.
    Yes, they can learn some simple stimulus response stuff, but it's hard
    to convince me that a gastropod, related to snails without an organized
    brain (only has a single pair of major ganglion) can truly reason.

    Those who say that they are as smart as housecats underestimate
    housecats...

    I cheated and bought those pre-cleaned, but other than the chitin spine,
    (octopus don't have one), cleaning an octo is no different than cleaning
    a squid but the hollow mantle is usually left connected to the
    tentacles. It's easy with careful cutting. :-)

    I can repost the "how to clean squid" series if you'd like?
    Octopus IMHO is similar to squid in both texture and flavor, but a bit
    more tender.

    I've not cleaned octopus in awhile but next time I buy an intact one,
    I'll take pics. <G>

    Whenever I am trying to explain where a cut of meat comes from i point to or
    grab the corresponding part on my or david's body. For some reason it creeps
    him out!

    I'm perfectly capable of butchering and cutting up my own food, and
    have, but I will most definitely draw the line there. I'd starve first.
    Truly.

    There are plenty of sites on the 'net for proper cuts for livestock.
    What is really scary is the _rest_ of that website. I did not have the
    nerve to explore more than a few pages.

    It creeps me out too!

    When it comes to population control, I'm a big believer in education and
    contraception. Seems that human reproductive rates tend to be inversely
    linked to income and education levels. Sad.
    But that's really OT! I'll stop here.
