Beef App ideas?

  1. I've been tasked/talked into make a beef appetizer for an up
    coming party.

    I was thinking of smoking some filets to Med rare and thin
    slicing them (lox). I'll flower them (twist) on round
    crackers. Dollop of horseradish & sour cream sauce and top
    with caviar. Garnish will be fresh dill?

    What do you think of this?

    IMO the caviar taste will not go well with the beef.
    Otherwise it sounds terrific.

    IMO the caviar taste will not go well with the beef.
    Otherwise it sounds terrific.

    I also agree that caviar wouldn't taste right on beef. What
    about caramelized onions instead of caviar? For a garnish,
    tarragon would also be nice ....

    That sounds good to me, but some people are turned off by
    the slightest hint of red in meat. Fortunately, those people
    tend to be in the minority.

    Don't like the fish and beef combination;

    Cut the beef (fillet) into large cubes. Season with Cajun
    spices Blacken quickly on a very hot dry cast iron pan. (all
    6 sides of each cube) Allow to rest and cool. Slice into and
    serve on a toast triangle cutting each slice in half to
    match the triangle. Serve with a dollop of wasabi and
    mayonnaise mixture and shreds of daikon.

    (about the same as Blackened Ahi)

    Is this an invitation 😉 Sounds good to me. I'm not so sure
    about the dill though.

    Rather than caviar and dill, I'd use a tiny amount of
    duxelles (finely chopped sauteed mushrooms) on top.

    What does "lox" have to do with beef... that's a pretty
    disgusting combination, even in the same sentence, even
    figuratively.

    I think I would slice the tenderloin very thin, as you
    suggested. Then I would schmear horseradish sauce down the
    center and add a sauteed asparagus tip. Roll and serve warm
    or cold. This way you aren't alienating low carb people by
    serving it on bread. :-)
