Note: next time I will put more flour to make the first layer higher. Then I
will try to add some custard to pears!

Black tarte with pears

Nb persons: 8
350 g flour - all purpose
25 g cocoa - bitter
200 g butter - 8or margarine)
120 g sugar
1 egg - whole
1 1/2 cup cookies - or graham crakers
2 pears - big
2 tbs icing sugar
1 tsp butter - for the stamp (22cm diameter)
Take a tarte stamp and butter it, than cover with few flour.
Peel and cut pears in little cubes (about 1 cm side).
Crack the cookies.
Put flour, cocoa and butter (very cold) in a food processor and mix for 2-3
minutes. Put then the mixture on a rolling board and make a hole in the
middle.
Put in the hole sugar and eggs and mix speedly with your hands. You will
obtain a ball. Cut the ball in two pieces (one bigger than the other).
Lay out the bigger piece of dough till you obtain a disc. Put this disc in
the tarte pan. Over this, make a layer of cookies, and over this, put pears.
Cover with the other disc of dough and close with the excess of the
precedent disc (like you are making a pie).
Put in the oven at 160 °C for about 45 minutes or more if need.
