Stainless are very nice. They don't mark up the bottles and are very
rugged.
Blackburn makes some very nice ones - the "Chicane" model. They are
42g and I got mine at the LBS for ~$15 apiece. So, not too heavy,
not too expensive, don't mark up the bottles and will last (probably)
as long as the bike. What's not to like. Nitto makes a couple of
models as well, but they are a lot more expensive. I know that
Rivendell carries the Nittos. Also, the Blackburns match my brushed
Ti frame almost exactly.

My solution is to use grey or silver bottles (with Tacx Tao cages).

As long as they don't allow the bottle to rattle loudly. The tubular ones
I tried (Blackburn?) did.

I didn't know about the Blackburn stainless cages. The Nitto ones are
really nice to look at, but I have not handled them myself. Like the
rest of their product line, I'm sure they're very good.

The Nitto cages are very well made, and look good on the bike. My Blackburn
cages are lighter than my old aluminum cages or the Nitto cages, well made,
and a lot cheaper than the Nittos.

best option. King cages are great cages.

The Elite SS button cages are too light weight, had several of them fail.
The alum ones seem ok

I sent my 1980 BB cages back to in for warranty as the welds began to crack
a few years ago and the rails were about worn half way in places. They sent
me replacements, painted alum, I've used them a few times, paint is coming
off and marking the bottles.

I now use carbon cages or the Tacx cages Postal used in 2004. I find them
reliable, but if I get sports drink on the outside, the sugar makes it hard
to get the bottle back in fully.

After reviewing all the suggestions, I think I'll try the King Stainless steel
cages. I really dislike the way the aluminum cages mark up the bottles.

I went with the titanium versions, also made by King. They fill you
up, but don't slow you down <g>
