I don't really use a recipe but do the following:
I follow the basic cookie recipe on the Quaker Oats box. Mash about 1 cup of walnuts into a paste
and substitute it for part (about 1/4 c.) of the shortening. Use real butter as the shortening, and
add the spices listed above to taste (mostly cinnamon and nutmeg), as well as a little vanilla.
Then, stir in the oats (I use the Old Fashioned oats, not the quick ones), and the above additives
(chips, coconut, chopped walnuts) and form into soft balls - flatten them a little. Place on greased
cookie sheet and bake at 360F until done - you want to underbake them just a tad. They spread quite
a bit, so leave plenty of room on the cookie sheet.
Next time I make them, I will measure my ingredients and then post the recipe. 🙂
