Cashews Raw versus Roasted?

  1. I am making cashews a mainstay of my diet are a good healthy source of protein that is reasonably
    satisfying.

    Do I need to avoid roasted cashews in favor of raw ones? Does the roasting cause the fats in cashews
    to become saturated or trans-fats? Obviously the roasted cashews are much tastier, but I will eat
    them raw if raw is much better.

    Your diet sounds a bit nutty to me.

  4. Even "raw" cashews have been roasted some. I like both. In the fully roasted nuts, I'd stick to the
    dry roasted nuts. Nuts roasted in oils will have more damaged/altered fats, I suspect. Further, heat
    destroys a percentage of the vitamins. Cashews should be viewed like peanuts that is as a second
    best to real nuts.

    The only commonly consumed "real nuts" according to the botanical definition are hazelnuts and
    chestnuts. The edible part of walnuts, pecans, almonds, cashews, pistachios and macadamia nuts are
    seeds of a drupe (like cherries and peaches). Peanuts are legumes. What I'm trying to say is the
    suggestion to eat "real nuts" only is nonsensical . All of them are good for you.
