Celery Sale

  1. Last weekend my local stupidmarket had celery on sale...
    right next to the single bunches of celery at $1.39 each
    were 6 huge beautiful bunches bundled in a plastic bag for
    $1.99... which would you buy? So now wtf do I do with about
    10 pounds of celery??? So far I've used a couple of ribs in
    a tuna salad, but that didn't make a dent, in fact I think
    those jolly green giants are growing in my fridge... things
    were beginning to get desparate so I figured I'd better
    check out celery recipes. Yup, braised celery would use up
    quite a bit, but I really didn't feel like eating all those
    pounds of just celery. So, next best thing for using up
    celery seems to be "soup", but I'm not big on creamed
    soups. After perusing a dozen or so celery soup recipes
    (all about the same - called for bacon and cream) I decided
    to wing it....

    In a heavy 4 qt pot I sauted lightly in 2 tbls each olive
    oil and butter a medium onion, diced... 4 cloves garlic,
    slivered... and two med carrots, small
    dice. I cleaned and cut into 1/2" pieces an entire celery
    leaves and all, tossed that in the pot and lowered
    the heat all the way while I peeled and diced 4 med
    potatoes, tossed them in the pot too. Then added a
    can of chicken stock and enough water to cover.
    Added a small bay leaf, a big pinch of dried
    marjoram and dried parsely, and a generous dose of
    fresh ground black pepper. After simmering on low
    for about an hour everything was tender and tasted
    wonderful except it needed a pinch more salt. I had
    3 quarts of soup (more like chowder), now half gone.
    I guess it would have been nice had I added say a
    chunk of chuck but I didn't feel like defrosting an
    entire roast just for about 1/2 pound. Maybe in a
    couple days I'll do a meat version, perhaps celery
    and short ribs, braised.

    So any other good celery recipes? Yeah, I know all about
    celery stuffed with cream cheese and peanut butter.

    Pickled Celery

    # 1

    4 celery hearts Juice of 1/2 lemon 1 pt. vegetable oil
    Juice of 6 lemons
    1/2 pt. wine vinegar 1 clove crushed garlic 1 tbsp. chopped
    parsley 1 tsp. oregano Good dash cayenne pepper 1 sprig
    thyme 1 bay leaf Salt and pepper Sm. jar pimentoes

    Trim, wash and halve four select young celery hearts of
    equal size. Parboil for 8-10 minutes in just enough water
    to cover along with juice of
    2/2 lemon. Prepare a mixture of oil, juice of 6 lemons,
    wine vinegar, garlic, parsley and remaining seasonings
    and set to boil. Add parboiled celery and cook until
    tender. Remove celery to serving plate and decorate with
    pimento. Serve very cold!

    # 2

    1 med. bunch celery
    3/2 c. sugar
    4/2 c. white vinegar
    5/2 c. water
    6/2 tsp. mustard seed
    7/2 tsp. salt

    3 1/2 hours or the day before, cut celery into 1 inch
    diagonal slices. Place in a large bowl. In 1 quart
    saucepan cook over high heat sugar, water, mustard-seed,
    and salt. Pour over celery and stir gently and refrigerate
    for at least 1 hour, stirring occasionally.

    Original Waldorf Salad

    This very easy, simple salad has a long, rich history. It
    was created in the 1890s at New York's Waldorf-Astoria
    hotel by maître d' Oscar Tschirky. The original salad
    contained only mayonnaise, apples and celery, but today is
    usually served with walnuts and other ingredients. This
    recipe serves four to six.

    "variation"

    Ingredients: 2 ribs celery
    8/2 c. red grapes
    9/2 c. walnuts 2 apples
    10/2 c. mayonnaise
    11/4 c. sour cream 1 lemon 1 head horseradish or
    romaine lettuce

    Steps:
    12. Cut the white ends off the celery ribs. Use a vegetable
    peeler to peel off the strings that cover the outside
    of the ribs.

    13. Dice the ribs into 1/4-inch squares.

    14. Cut the grapes in half, and use your fingers or a knife
    to break the walnuts into pieces. (Image 1)

    15. Wash, core and dice the apples. (See Tips for apple
    varieties.) (Image

    17. Place the apples, grapes, walnuts and celery in a bowl.
    Add the mayonnaise and sour cream and stir everything
    together. Squeeze a few teaspoons of lemon juice in,
    stir well, and taste - the lemon juice should be almost
    undetectable. (Image 3)

    18. Arrange a large whole inner leaf of romaine on each
    plate and top each one with a scoop of the salad.

    soup in the future?????????

    Throw them straight into the soup when you use them - they
    look ultra ugly if you leave them to thaw... my experience
    from using a malfunctioning fridge provided by my
    landlord...

    I have made this soup/stew since many many times using my
    little 3 litre thermal cooker since I was a student - mainly
    to use up rotting veg. Use cubes of beef, brown them in a
    little bit of oil, loads of chopped onions, salt and pepper,
    splashes of soya sauce and balsamic vinegar. Then chuck in
    large amount of tomatoes, carrots, celeries,
    green/red/yellow peppers, potatoes (optional), cabbage
    (optional), spices (optional), tomato puree. Fill the pot up
    with water straight after I've finished putting in the
    vegetables. Leave it to boil then simmer for a loooonnng
    time. Nothing overly exciting - the celery will
    disintegrate, so you can be eating them without seeing them
    if you are fed up with seeing the celery... and more
    importantly, only ONE pot to wash!

    Stir fry them with sliced chicken thighs... I usually cut
    the celery into diagonal slices - kind of make them look
    bigger and easier to pick up.

  7. Ah! Just remember this - my mum makes this juice with a very clean fresh taste:

    celery green/granny smith apples green peppers white bitter
    melon (You might be able to find this in a Chinese
    supermarkt - I don't know what they're call but they're (1)
    bitter, (2) white in color, (3) their surface is smooth like
    bell peppers but it goes up and down like spoils on
    teenagers' faces)

    chop them all up and throw them all into a juicer.

  10. I think you could dry the celery. You'd lose the texture,
    but you'd still have the taste.

    tried drying celery. Didn't quite do it. The end product was
    very hard and it didn't rehydrate to what I wanted.

    They eat everything else :-(. They even ate the rhubarb
    leaves last fall; apparently, they don't get poisoned by
    them? So probably they'd enjoy the celery (if other young
    growth isn't tastier).

    Can't help you much on celery recipes, other than suggesting
    the usual soups, stews, salads, etc. I've never tried to dry
    the stalks.

    They probably will. And while you're trying to keep them out
    of your garden going after everything else you will be
    cursing yourself for feeding the deer.

    No problem here, I love deer (and I'm not talking about
    venison, although I love that, too). But once you invite
    them near your garden, you may have a problem.

    I admit that the first thing that popped into my mind is
    Chop Sue E.

    I drove by the old Grand China restaurant here in Sandy
    Eggo, that has been going since 1924 and realized I hadn't
    eaten there in some time. It a shame because I would hate to
    see such a piece of history be unsupported. With all the new
    "more authentic" and, of course, more expensive Chinese
    restaurants the old Chop Sue E restaurants with their
    wonderful fantasmic Chinese decor are disappearing. Best
    place to go for BBQ pork fried rice, fried shrimp, Chop Sue
    E, and Chow Mein with pots and pots of jasmine tea and very
    reasonable prices. Just about every town (at least here in
    California) had at least one of these Chinese palaces. They
    all looked remarkably similar - booths, lots of pagoda
    looking woodwork and paper lanterns. There are many simple
    things I miss these days and the old Chop Sue E palaces are
    the one I'm missing now. I only know of two of them left in
    the San Diego area. There is also the Grand China in
    Escondido.

    No sense on wasting all that lovely celery on just soup and
    stuff. Sheldon can mix these up and chug 'em down the
    morning after. With celery of course. I just hope these
    recipes don't kill him 😉

    Aunt Emma's hangover cure

    1 large can of tomato juice 3 Tablespoons vinegar 1 lemon
    4 slices of onion 3 Tablespoons of sugar 4 stalks of
    celery 2 teaspoons of Tabasco sauce salt and pepper to
    taste Mix ingredients in a container, let stand overnight.
    Strain and serve.

    Prairie Oyster Olive oil Tablespoon tomato ketchup 1 egg
    yolk Salt and pepper Tabasco Worcestershire sauce Vinegar or
    lemon juice

    Rinse a cocktail glass with the olive oil and discard
    oil Mix all ingredients except egg yolk. Place the egg
    yolk in carefully. Serve with a small spoon and a glass
    of ice water.
