Cheese

If you mean processed cheese, like Kraft Singles, you don't
have to freeze
it. You can just keep it in the fridge or even in the
cupboard if there's no danger of it melting. Some
supermarkets don't bother refrigerating
iu.

I wouldn't freeze it though - it might do strange things to
the texture.

Once thawed it will taste fine but it will become crumbly.
So it depends on how you intend to use it. Melted will be no
problem but sandwich will be a problem.

Actually, IMO, it depends on what one is going to do with
the cheese later. If it's going to be cooked in something,
real cheese usually does just fine. I've sucessfully frozen
shredded cheddar, shredded mozzarella/provolone mix, sliced
swiss, and sliced pepper jack. I actually purposely freeze
cream cheese if I'm going to want it melted in something
later as I think it melts better after freezing.. However,
if it's cheese you're going to eat w/out it being cooked in
something, I probably wouldn't freeze it. Back when both my
sister and I were home, mom would get the 72-slice packs of
American Cheese (not the individually wrapped slices, but
the sliced kind). It always seemed to keep just fine. Mom
would pull off a small stack of sliced, then wrap the rest
up tightly in plastic wrap and foil, and then stick it down
in a large ziplock bag.

be frozen. The OP doesn't say what kind of cheese or how
much (huge is subjective). With most cheese it's texture
will change but if it's going to be used for cooking (even a
grilled cheese) texture doesn't matter. If it's say like a
five pound package freeze say half, it's easy to remove part
as needed.

Maybe I should have said "good" cheese. Sure, you can
freeze anything. You can even freeze your ass off, but I
don't recommend it. Freezing a good cheese turns the
texture to sawdust when thawed. If that doesn't bother you,
freeze away.
