cook them that way. Buy them with the skin and on the bone at
significantly lower price, and cook them that way for vastly better
taste and juiciness. Then if you must, remove the skin or bone or
both before eating / serving.Exception: any of the thousands of stirfries, but note that many of
them -- especially those with more robust seasonings -- actually work

I just did a passel of them for a dinner potluck. I soaked them in
lime juice and rubbed them in freshly ground chipotles with smoked
salt and pepper. Then I roasted them in my propane smoker.I scraped some of the chipotle stuff off the outside after they'd
cooked, sliced them, and drizzled some Bufalo chipotle and yogurt and
garlic-infused olive oil on them for the multitude.They were well received.
Oh, yes, I also made a relish of shredded cabbage, Scotch bonnet
chiles (finely sliced), lime juice and salt to serve with the chicken.
It was muy picante, but I warned folks. Them as like hot stuff ate it
