    When cooking for others, I try to cook things that I do not range too
    far out of the norm. I know I like my meat overcooked as well as most
    vegetable (the few that I like). I can make them the normal way, but I
    would have to separate some to cook for my own taste, and that would be
    kind of strange when serving guests. Best to stick with stuff that can
    be the same for everybody.

    The red color is myoglobin, similar to hemoglobin in blood, but it's
    the kind in the muscle. They both do the same job, and it is what
    causes the color ofof the beef to be red. And it makes undercooked meat
    appear to be bloody. And let's face it. When it comes to appearance and
    food, appearances ARE important. I don't want to eat something that
    looks raw.
