    While there are many meat dishes, beef, pork, chicken, fish, lamb etc.
    that are to be served cold they must be cooked first. One possibility
    is to cook them in the cool of the night for service the next day. If
    this is not an option then cold veggie dishes seem the obvious choice.

    Any favourite veggies finely minced and dressed with a flavourful
    vinaigrette and served with pasta is very good.

    Various fruit salads which require no cooking, and though tastes vary i
    am quite fond of the Italian meal of fresh bread, fruit, cheese and
    chilled wine.

    Chunky peanut butter thinned with a little sesame, peanut, walnut or
    grapeseed oil and tossed with rice noodles is good. Often times a bit
    of pepper oil or cayenne flakes are added.

    Pasta primavera made with spiral pasta and olives, broccoli, red onions,
    shredded carrots, sliced mushrooms & fetta cheese and a vinaigrette is a
    favourite. Often salmon is added but can be left out to good effect.

    recipe:

    Spicy Peanut Lo Mein Salad

    Recipe By 😄amsel in dis Dress
    Serving Size : 0 Preparation Time :0:00
    Categories : pasta salads/dressings
    side dishes

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1/2 cup peanut butter -- chunky
    1/3 cup soy sauce
    1 tablespoon saki (rice wine)
    1 tablespoon sesame oil
    1 1/2 teaspoons hot bean sauce
    5 tablespoons granulated sugar
    2 tablespoons fresh garlic -- minced
    3 tablespoons cilantro (coriander) leaves -- minced
    16 ounces lo mein noodles

    Combine all ingredients (except noodles) thoroughly.

    Cook lo mein noodles according to package directions, being careful not to
    overcook. Immediately drain and rinse in cold water.

    Gently toss the sauce and the noodles together.

    Serve chilled. Sprinkle sesame seeds on top to serve, either in the
    serving platter, or on individual portions.

    Substitutions:
    Use vermicelli instead of lo mein noodles.
    Use creamy peanut butter instead of chunky.
    Increase hot bean sauce to 2 tablespoons for a spicier salad.
