Dinner last night...

  1. After a long and emotionally devastating day, I was in no mood to cook last
    night. At first, anyway. My delightfully thoughtful husband picked up a
    couple of rotisserie chickens at Costco (if you've never tried them, do!)
    and we were debating on what to have with the chicken. Salad, easy enough,
    yes? Now a nice easy side. Angel hair! I made the pasta and in the meantime,
    sautéed about 4-5 med sized cloves of garlic till golden then added a jar of
    marinated artichokes (drained and rough chopped) and about 8 diced roma
    tomatoes. A sprinkling of sea salt, and a sprinkling of lemon juice.
    Simmered a few minutes till the pasta was done and drained, then tossed.
    Topped with a chiffonade of fresh basil, and a light sprinkling of asiago.
    Yum! It was a delicious dish and rounded out the meal quite nicely...as well
    as having the added benefit of distraction!

    That sounds awfully good. Tonight I was going to christen my
    toaster oven rotisserie; the chicken is still frozen solid, alas. Been
    out of the freezer since at least Tuesday, what is up with that.
    Anyway, it's ribeye steak, baked potatoes and a big salad tonight,
    perfect meal for himself who is recovering from a nasty whateveritis
    he had, don't really think it was a cold.

    We generally don't buy their roasted chickens except when we're on our way
    home and we're kinda hungry. If nothing else, two chicken sandwiches for
    $4.99 -- whatta deal! Better than stopping famished at a fast-food
    restaurant.

    Nothing wrong with that. My experience with rotisserie chicken
    from the supermarket was really bad, and I'm really just talking
    about the few times I tried it. I know there are better out there.
    Tiny, overdone dried out things.

    Was wowed by the one I bought from Whole Foods one time,
    and for the price, sounds as if the Costco chickens are great,
    too.

    Where were they, though, when I was working for a living and
    often had no time at all to put dinner on the table, nor cared what
    was for dinner. Never mind when my oven was broken for
    about a year. Could have used them then. I started craving
    roast chicken.

    Costco rotissieried chickens have gained a great reputation, and for
    good reason. Try one sometime.

    I never used to like store bought ones, but the Costco chickens are very
    moist and very flavorful. And the price can't be beat!
    I like to use them for chicken wraps too...I just pull the meat off and mix
    it with some bbq sauce, then wrap in a warm tortilla with cheese. My husband
    likes tomatoes and onions on his, my daughter skips the cheese...but there
    so good and easy for a quick lunch.
