  1. Well, it's the yearly clean the garage day. UGH... I'd rather be
    horsewhipped nude at high noon in downtown St. Louis than clean the garage.

    Dinner will be baked tilapia fillets with a lemon, butter, tarragon sauce.
    I've got a lot of potatoes so I might do a potato casserole. I'm thinking
    some really decent creamed spinach to go with. Quick, simple, easy and
    terribly unimaginative. Oh... Ben & Jerrys for dessert.

    If you're that excited about it 😉, please do come over. I've quit and
    Steven is still at it. We've only gotten 1/2 of it done today. The rest
    will be finished Tuesday. Monday after class, I've got a man coming over
    for kitchen estimates.

    brown rice mixture in the freezer. I put it in a big pot along with
    some frozen takeout salsa and a bit of leftover refried beans. I
    added some cumin, covered it all with chicken broth, and simmered it
    slowly. It turned into a tasty, spicy soup. We ate it over
    cornbread.

  19. Creamed chicken -- inspired by Damsel's recent post about Chicken a'la
    King --

    I put two chicken thighs in my crockpot, sprinkled them with some
    seasoning salt and added about a cup of chicken broth. Once the
    thighs were falling apart tender, I shredded them and stirred the
    chicken, a bit of the drippings, and a handful of frozen peas into two
    cups of white sauce. Creamed chicken should be served over biscuits,
    but I had leftover cornbread, so cornbread it was. And it was good!
