Medline link. No mention of patient potassium management. Does speak to
close management of potassium levels by your physician.

As long as you have normal kidney function, you should not have to avoid
food/drinks high in potassium because your kidneys will just excrete any
excess that the body does not need. However, your doctor should be asking
you for blood tests to assess your electrolytes, liver, and renal function
on a regular basis.
Grapefruit juice can increase serum drug levels and should be avoided while
taking Dofetilide.
