Four reasons mainly.
(1) they protect your palm in case of a fall
(gravel rash)due to the padded palm.
(2) they help protect your palms against vibration
due to the padded palm.
(3) they help protect your hands from blisters whilst riding.
(bad bar design)due to the padded palm.
(4) mine have terry towellling covering about 50% of the back
(the rest is Lycra)handy for wiping sweat dripping down your face.
(wouldn't recomend them for wiping your nose
as they can't cope with that amount of liquid).
Fingerless so your hands don't overheat
NOTE :-
All this only applies to 'proper' track mitts
not just any pair of fingerless gloves
