I recently got a dutch oven (Mario Batali) and I'm thinking of something fishy, like throwing flounder and salmon in there with some squash and onions and garlic. Those are the first things that come to mind.
What else can you think of adding? Is dill appropriate? Capers? Greens (spinach or cabbage for example)? Yams (par-boiled)?
I'd rather use rice than potatoes, unless they were yams. Would it be possible to put some rice on the bottom to absorb some moisture? Fully pre-cooked rice?
What cooking time would you estimate?

Cooking time: About 5-7 minutes. Most fish will turn into pudding when cooked by the method you're describing. Forget it. Please.

If you need to prove this, bake a piece of fish until it's perfect, which you'll know when you can barely separate bite size pieces with a fork. Then, put it back into the oven for another hour. :-) You'll need a spoon to eat it.

Shark might work. I wouldn't want to ruin flounder or salmon by cooking it like that.
