Fish Taco Recipe Anyone?

  1. Hello everyone,

    My Mother's birthday is next week & she has a thing for fish tacos.
    Personally i've never had one, but i've been googling recipes & there
    are a wide range out there. Best fish for the job? Sauce?
    Accompaniments? I think she has said in the past something about a
    coleslaw type garnish? None of the recipes i've found so far have
    said anything about that! lol Also, does anyone have a favored
    guacamole recipe? We're originally from Phoenix, so we cook, eat, a
    lot of mexican influenced foods. TIA for any suggestions or help!

    "Coleslaw type garnish" points toward the original Baja California fish
    tacos. Chunks of the freshest fish, often yellowtail (but any white
    fleshed fish works fine; cod is probably the standby), a light beer
    batter, fried quickly and put in a warm soft corn tortilla. Add some
    thinly sliced cabbage, some mayonnaise (or mayo and sour cream mixed),
    and some squirts of fresh lime juice. Fresh salsa optional. That's
    how they do them at the fish docks in Ensenada and Loreto. -aem

    Fish tacos are great and as you said there numerous recipes all over.
    the best fish tacos i have had though were in cozemel followed by this
    little fish taco stand on the north shore, ohau

    Since you are from the SW, i thought i would post this one.

    Fried Catfish Taco with Chipotle Slaw

    Yield: 4 servings

    2 (6 to 8-ounce) catfish filets
    1/4 cup milk
    1/4 cup Creole mustard
    1 teaspoon hot sauce
    3/4 teaspoon salt
    1/4 teaspoon cayenne pepper
    1/2 cup flour
    1/4 cup yellow cornmeal
    1 tablespoon Essence, recipe follows
    4 to 6 cups vegetable oil for deep-frying
    2 teaspoons finely chopped chipotle pepper in adobo sauce
    1/2 cup mayonnaise
    2 tablespoons honey
    1 tablespoon lime juice
    1/4 pound shredded white cabbage (about 1 cup)
    1/4 pound shredded red cabbage (about 1 cup)
    1/4 cup finely chopped red onions
    1/4 cup chopped green onions
    8 crispy corn tortillas

    Using a sharp knife, cut the catfish filets into 1-inch thick strips on
    the diagonal.
    Place fish in a medium mixing bowl along with the milk, Creole mustard,
    hot sauce, 1/2 teaspoon of the salt,
    and cayenne pepper and stir to thoroughly combine. Refrigerate for 1 hour.

    Meanwhile, make the Chipotle Slaw by combining the chipotle pepper,
    mayonnaise, honey and lime juice in a large mixing bowl.
    Stir well, then add the shredded cabbage, red onions, green onions and
    stir to thoroughly combine.
    Season with the remaining 1/4 teaspoon of salt, and refrigerate until
    ready to assemble the tacos.

    Heat the vegetable oil in a large cast-iron skillet or a deep fryer
    until a thermometer registers 350 degrees F.

    In a shallow plate or bowl combine the flour, cornmeal, and Essence.
    Dredge each piece of fish in the flour mixture until
    well coated on all sides. When the oil is hot, gently place the fish in
    the hot oil and deep fry until the fish is golden-brown
    on all sides, about 2 minutes. Using a slotted spoon, transfer the fish
    to a paper-lined plate to drain.
    Season with salt and pepper to taste.

    Using tongs, quickly dip the corn tortillas in the hot oil until they
    begin to sizzle.
    Transfer to paper-lined plates to drain briefly, then serve, with the
    catfish and slaw divided among the hot taco shells.

    Essence (Emeril's Creole Seasoning):

    2 1/2 tablespoons paprika
    2 tablespoons salt
    2 tablespoons garlic powder
    1 tablespoon black pepper
    1 tablespoon onion powder
    1 tablespoon cayenne pepper
    1 tablespoon dried leaf oregano
    1 tablespoon dried thyme

    Combine all ingredients thoroughly and store in an airtight jar or
    container.

    Yield: about 2/3 cup

    I think yu're very SWEET to try to make your mother's favorite dish
    for her birthday! But, I *don't* like fish tacos and don't understand
    what all the hype is about. With that said, I'd use a fish that's
    good for fish & chips, like cod. What are you going to do about the
    "sauce"? It seems to be a big deal in the fish tacos.

    Thank you very much! It sounds like a good flavor combination.

    I shall have to find a sneaky way of finding out which way she likes
    her tortilla! lol When I was little we had slightly fried shells that
    were still soft. For convenience sake now they come in a box in
    crunchy flavor. This is the year I purchase a tortilla press & learn
    how to make my own! Hopefully it's not that hard! lol

    her birthday. All I got was "For you to cook!". lol She asks for
    hotsauce about twice a month, but she always goes on about fish tacos.
    The sound of them has just never appealed to me. Shredded beef is
    another story. Whatever I decide on i'll probably make it once
    before next weekend just to try it out on my kids. If it's a bust
    we'll go for the standards. We're in a rut & eat the same things
    weekly! Doesn't even help to go to a relatives for dinner for a
    change cause we all are in the same rut! It's very deep! TMI
    probably, but i'm a rambler i'm told, so I apologize. 🙂

    As for the sauce, there was a recipe I found on foodnetwork for a
    chipotle crema that sounded nice. The fish they use is Mahi mahi?
    I'm not sure what that is. I know catfish, talapia, cod (malt vinegar
    YUM!) & that's about it! I'm more of a crab person myself. Although
    stick a plate of pinto beans, fried potatoes, bottle of tobasco sauce
    & a hot flour tortilla in front of my face & i'm good. I'm from SOUTH
    Phoenix afterall. 🙂

    your very welcome... and i highly suggest everybody making there own
    tortillas and get a press. up here at Allen & Peterson a tortilla press
    is only about $16. i suggest getting a hamburger press as well.
    be sure to keep a moist towel over the bowl of dough as they dry out
    very fast.

    You have some good advice already, but also know you can grill the
    fish or pan fry, use a different white sauce like tzatziki and so on.
    I've had them made with salmon, barracuda, shark and a host of other
    fishies.

    You have the recommendations from aem and that pretty much agrees with
    what I know. Do not substitute lemon unless your mom does not like
    lime. Bit of cilantro may be in order.

    The fish can be grilled, but I like them beer battered, too. I make my
    tacos exactly like aem does. :~)

    Then none of those recipes are the Real Thing. (Half-joking there.)

    I'll try to be as exact as possible, although I have not recorded
    proportions for this dish, folks tell me it's really good.
    There are three components: tortilla, fried fish, and cole-slaw
    type garnish.

    Use good thick corn tortillas, the best you can find.

    For fish, I like to use Alaska halibut (rock cod is more
    traditional, but not as good, and it's harder to avoid bones).
    Buy Alaska halibut filets (NOT "California halibut" which is
    again a rockfish) and have the skin removed if it is not already.
    Cut them into chucks about 3/4" or 1" each dimension; dip in
    a mixture of buttermilk, some dried chili power (New Mexico,
    ancho, etc.), and a good shot of lemon extract; dredge in a
    little flour; and pan-fry them. I use 50-50 olive oil and
    safflower oil, as this allows a higher temperature than pure
    olive oil.

    The cole slaw is made ahead of time from shredded cabbage, sliced
    mild red onions if you have them, and sour cream, and seasoned with
    salt, black pepper, perhaps a little more chili powder, and vinegar.

    To assemble them, place the just-fried fish on top of
    a warm tortilla, squeeze a generous amount of lime juice
    on the fish (this is important), top with cole slaw, and
    serve immediately.

    I'm guessing each taco has about 2 oz of fish and 1/3 cup
    of the cole slaw mixture. A person will eat two or three
    tacos. You may want to make them in two batches so that
    each taco is served fresh.

    They're one of my favorite foods because of the classic apposites:
    hot, spicy fish vs. crispy cole slaw; chunky salsa vs. creamy guacamole
    (or a cool, smoky chipotle cream). The best flavor combinations ever.

    frankly, Mahi Mahi is too expensive (and firm) to waste in a taco.

    I live in San Francisco. My son makes them for me at home -
    apparently his friends say his fish tacos are better than any
    commercial fish tacos they've eaten (I know they are requested).

    I'm not saying they aren't good. I don't like fried fish and
    especially don't like fried fish with a batter on it.

    I can see making tacos with mahi-mahi: Suppose you went out deep-sea
    fishing, and a mahi-mahi is what you caught. In that case, the expense is
    irrelevant. In fact, that's those are the circumstances under which I first
    had mahi-mahi (though being in Florida, we called it "dolphin."😉

    I'm not sure what makes you say mahi-mahi is too firm for tacos. It's
    certainly not as firm as carne asada, is it?

    Whereas grilling can dry fish out, batter-frying does a good job of keeping
    the fish moist. Good fish tacos *can* be made with grilled fish, but it
    requires much more careful cooking. You can also grill-steam by wrapping
    the fish in foil; that provides a bit of a safety margin, though you run the
    risk of the fish becoming mushy.
