All my recent stresses will pass with time (I can't control when though
grrr...) and I'm wondering what people eat when they are under stress?
I seldom get stressed anymore, but I find chili on toast with a couple
of fried eggs on top comforting. You're in the right place to take
advantage. Um... there's a bit of starch though.
<Leo's made up/spur of the moment recipe>
Two honking pieces of thick toast. Cut one diagonally. Arrange on a
plate. I'd butter them because I don't monitor my diet.
Either make chili or buy a can of your choice. Beans or no beans? Again,
your choice. Heat that up or make it.
Fry up two eggs while the chili is heating up or near the end of your
creating it.
Put the eggs on top of the toast and pour the hot chili on top of that.
I prefer over easy, but use your favorite breakfast egg.
You can add condiments if you wish, but the above stands alone. I like
grated cheddar-jack and finely diced onion occasionally. What you think
you might like will do. Mango might be good on top.
<end of made up recipe>
I'd eat that in a flash in a blue mood. There's that starch problem
though.
Oh, for a super hearty meal, put a hamburger patty on the toast, then
the eggs, then the chili, etc., etc.
I first ate a better version in the Mapes Hotel in Reno in the early
sixties. I still make it.
