You can find a Chinese restaurant in even the most backwater hick town
in the US, but not a single Chinese cooking show. No wonder the food

Like any other station, they're going for ratings. They probably don't think
enough people would want to watch ethnic cooking shows where one ethnic
group is the "hook" on the show.
They figure that most people are familiar enough with Italian to be
comfortable cooking that, but start waving a bok choy around, and they're
going to figure that people are doing to be too stupid to be able to figure
it out.
There are some bits and pieces of ethnic cooking now and then on the
different shows, but not particularly authentic. Americanized versions.
Which is probably what they figure the average viewer is going to want.
Personally, I'd love to see more ethnic cooking shows, but the other thing
I'd want is suggestions for ingredient substitutions for things that can't
be found in nowhere-America grocery stores. Or online sources, even. Sure,
I'd like to make it authentic if I can, but I can't fly in exotic
ingredients. I wouldn't want to watch a show knowing that the ingredients
aren't ever going to be available to me.
