    Black Bean Chili

    Recipe By 😄amsel in dis Dress
    Serving Size : 16 Preparation Time :0:00

    Amount Measure Ingredient -- Preparation Method

    16 ounces dried black beans -- rinsed and sorted
    1 pound ground beef
    1 pound beef stew meat -- 1/2" cubes
    1 medium onion -- finely chopped
    1 medium green pepper -- finely chopped
    1 clove garlic -- finely minced
    28 ounces crushed tomatoes
    5 teaspoons chili powder
    1/4 teaspoon cayenne pepper
    1 teaspoon salt
    water -- as needed

    Rinse and sort the beans. Place into a 3-quart saucepan with 2 quarts
    of water. Bring to a boil, and remove from heat. Let stand for one
    hour. Drain; add fresh water, and bring to a second boil. Reduce
    heat and simmer for one hour. Drain.

    Coat stew meat with a small amount of flour. While beans are cooking,
    brown ground beef and stew meat in a 4-quart saucepan (start the
    ground beef first, so there is some fat in the pan to keep the stew
    meat from sticking). When meat is browned, add the onion and green
    pepper. Cook until the onion is translucent. Drain off any excess
    fat. Add garlic, tomatoes, and spices. Simmer until beans are ready.
    Add beans and water, if needed. Cook until beans are desired texture.
    Adjust seasonings if needed.

    Serve with crackers and shredded cheddar or monterey jack cheese.

    Pepperoni Pizza Rolls

    6 ounces pepperoni -- (1-1/2 cups, cubed)
    1/2 cup pizza sauce -- recipe below
    8 ounces shredded mozzarella cheese -- (2 cups)
    won-ton wrappers
    ---SAUCE---
    2 tablespoons olive oil
    1/2 cup chopped onion
    8 ounces tomato sauce
    6 ounces tomato paste
    1 teaspoon Worcestershire sauce
    2 tablespoons grated Parmesan cheese
    2 teaspoons dried basil
    2 teaspoons dried oregano
    1/4 teaspoon granulated garlic
    1/4 teaspoon black pepper

    Remove casing from pepperoni. Cut pepperoni into 1/8" cubes. Stir in
    pizza sauce, then cheese.

    Place a scant teaspoon of filling in the center of a wonton wrapper,
    positioned on the diagonal. Brush a light coating of water along the
    two farthest edges of wrapper. Roll closest point over the filling,
    then bring the side points in and press. Roll snuggly and press
    farthest point onto the pizza roll.

    Deep fry at 375°F until golden brown.

    SAUCE:
    Heat oil in a small saucepan. Add onions, and saute until golden.
    Stir in tomato sauce, tomato paste, Worcestershire sauce, Parmesan
    cheese, basil, oregano, garlic powder, and black pepper. Simmer for
    about 15 minutes.

    Shrimp Rangoon

    Amount Measure Ingredient -- Preparation Method

    16 ounces cream cheese -- softened
    4 ounces canned shrimp -- drained and chopped
    3 whole green onions -- chopped
    1/8 teaspoon granulated garlic
    1 teaspoon Worcestershire sauce
    1 dash Tabasco sauce
    1/2 teaspoon soy sauce
    60 won-ton wrappers -- (12 ounce package)

    In medium bowl, combine all ingredients except won ton wrappers and
    mix until well blended.

    Using a pastry brush, moisten edges of won ton wrapper with water.
    Place scant teaspoon of filling in center of won ton wrapper. Bring
    opposite points together above the filling. Do the same with the
    remaining two points. Seal the edges thoroughly. Should look like a
    square version of a Hershey's kiss.

    Fry in deep fryer at 350°F until golden brown.

    May be frozen until needed.

    I am not really sure the point you are trying to get across. Are you saying
    we should post only our own recips from volume 2? I may be

    I think Dams means that if anyone posts a followup with their own 3
    recipes that they should snip the post so that only the three recipes
    they want to include are shown on the post in their name. That way, the
    post wouldn't become ridiculously long, and the recipes would be
    attributed properly.

    modified by me okay? As long as I list the book they came from and that
    it was modified, that is.

    Stacia, ingredients are not copyrightable. Specific instructions in
    certain terms are. Some instructions can't be copyright protected. I
    mean there is only one way to say stir if you know what I mean. But
    commentaries or personal notes on recipes are copyright protected. For
    that reason, I include the source as in "this recipe came from" or
    "recipe by" anytime I know the source. If the recipe came from a friend
    or family member I will refer to their first name but never their last
    name online but I do give them credit for their recipe. I have a lot of
    handwritten recipes that I don't have the sources from so for the most
    part I don't post them. I had a website where I posted a lot of recipes
    including pics of the dish. I got upset when I found some of the
    recipes along with the pics had been lifted so I basically shut down the
    website. It's still there just no content 🙂 I think for awhile there
    were webcrawlers going after any recipe online to help build sites like
    recipesource. They anything posted to the recipe ng is archivable so
    anything posted there is rather fair game. If I post a recipe from a
    book then I would cite the source complete with page number. My general
    policy upto today is to not post recipes. Today I would like to keep
    things a little more on topic by posting recipes.

    **This would indicate that altering an already published recipe and
    republishing it would be copyright infringement.

    What this also means is people who steal recipes from the net and
    repost them as their own are infringing on copyright law.

    I remember being listed on a bunch of webpages after posting to
    rec.food.recipes a copy of the microwave white sauce recipe I got from
    Betty Crocker (I think). Every time I did a vanity search I'd find my
    recipe posted on a dozen sites, which I didn't mind except they snipped
    the citation so no one knew it was from Betty Crocker. I kept expecting
    a lawsuit. Or a very angry Betty Crocker at my door.

    Okey-doke. These are three of my family's favorites lately:

    Spinach, Feta, and Caramelized Onion Quiche

    6 tablespoons butter
    2 medium onions, sliced
    5-6 oz. fresh spinach leaves, washed and dried
    6 medium eggs
    1 cup sour cream
    8 oz. feta cheese, crumbled
    a few pieces of marinated sun-dried tomatoes, optional
    2 pie crusts, not deep-dish

    Saute onions in butter on medium-to-low heat, stirring occasionally,
    until caramelized (30-60 minutes). Add spinach. Cook and stir until
    spinach wilts and most of the moisture seems gone. Set aside. Whisk
    together eggs and sour cream until creamy. Stir in feta and vegetable
    mixture, and tomatoes if desired. Pour into pie crusts (do not defrost
    first if frozen). Bake on cookie sheet on middle rack for 40 minutes
    or until tops are beginning to be golden brown and crusts are golden
    brown. Let stand for 5 minutes or so, then eat.

    Wheatberry Salad

    1 cup wheatberries cooked in 3 cups water (I use a pressure-cooker)
    3 chopped scallions
    1-2 chopped bell peppers, any color
    1 bunch parsley, minced
    1 handful mint leaves, minced
    1/4 cup lemon juice or vinegar (any kind)
    1/2 cup olive oil (or other oil)
    salt and pepper to taste
    1-5 cloves garlic, minced

    Drain wheatberries. Add scallions, peppers, parsley, and mint, and
    toss. Mix remaining ingredients and add to salad. Mix well. Chill 1
    hour or overnight.

    Cranberry-fig Sauce

    1 cup cranberries
    1 cup sugar
    1/2 to 1 cup water
    4-6 fresh figs, sliced

    Bring to boil, simmer 15 minutes, pour into jars, refrigerate or
    freeze. Wonderful on ice cream.

    Ahhh, shaddap! I told Nancy that I'd start a thread like that, just
    to see how much interest there was. Now, with at least six recipes, I
    think we're ready to publish that second cookbook!

    CHICKEN DIANE

    6 thin chicken breasts (made thin either by slicing or pounding)
    2 green onions, chopped, including stems
    1/4 cup fresh chopped parsley
    3 T brandy
    3 T dijon mustard
    1 medium lime
    2 T butter, halved
    2 T olive oil, halved
    salt & pepper

    Mix parsley, green onion, brandy, and dijon briefly in small bowl. Add
    juice of one lime and set aside.

    Melt 1 T oil and 1 T butter in pan over medium heat. Salt and pepper
    chicken breasts and add to pan. Cook until done, about 6 minutes per
    side. Transfer chicken to warm serving platter.

    Pour parsley, onion, brandy, dijon and lime mixture into pan and stir
    continuously for one minute, getting up all the chicken bits left in the
    pan. Add 1 T butter and 1 T olive oil and continue to stir for one
    minute. Pour over chicken. Serves 6.

    Notes: This is modified from a recipe card that's identified only as
    "Great American Recipes". Most measurements have been modified from the
    original.

    SOUR CREAM ENCHILADAS

    8-10 small flour tortillas
    1 pound ground beef
    1/2 medium white onion, chopped
    1 t onion salt
    1 t chili powder
    1/4 t red pepper powder
    1 t garlic powder
    1 cup shredded cheddar cheese
    1/4 cup flour
    1/4 cup butter
    12 ounces sour cream
    1/4 cup milk
    two 4-ounce cans chopped green chiles

    Spray 9x13 casserole with cooking spray. Brown crumbled ground beef and
    chopped onion in skillet over medium heat until beef is almost cooked
    through. Drain and return to skillet. Add onion salt, chili powder,
    red pepper powder, and garlic powder [1] to mixture and mix thoroughly.
    Cook until beef is done. Remove from heat.

    Fill each flour tortilla with some meat mixture, cheddar cheese, and
    green chiles. Roll tortilla and place seam side down in casserole.
    Fill 8 to 10 tortillas, until casserole is filled but not crowded.

    In saucepan melt 1/4 cup butter. Add 1/4 cup flour while whisking to
    make a roux. Add 12 ounces sour cream, 1/4 cup milk, and one 4-ounce
    can chopped green chiles including the juices to roux. Whisk until
    mixed completely and pour over enchiladas in casserole.

    Can top with remaining cheddar cheese if desired. Bake at 350 degrees
    for 20 minutes or until bubbly. Serves 4.

    [1] Spices can be adjusted or added to taste. A co-worker I know omits
    the chopped onion and spices and instead uses packaged taco seasoning
    in the meat.

    Notes: This recipe is heavily modified from a Farm Bureau cookbook which
    came out a year ago.
