  1. This is one of my contributions to Thanksgiving dinner yesterday.
    If you are bored all the blah, blah about it is on my blog.

    This is one of the signature dishes of the late Susan Hattie
    Steinsapir who participated here on rfc.
    I made a couple of very slight changes to the recipe. I use the full
    block of cream cheese and the full 5.5 oz package of the goat cheese.
    I also make my own pesto from Italian parsley because I like the bite
    it offers the dish.

    10 cloves of garlic ran through the garlic press. I prefer the garlic
    pressed rather than minced for this recipe.

    I make the all the layers in the food processor starting with the
    cheese, then the pesto.

    I don't make the pesto by hand for this dish, nor do I add the
    Parmesan cheese to it. Just parsley, pine nuts, olive oil and freshly
    ground black pepper.

    Run the sun dried tomatoes in the food processor also. Use only enough
    of the oil from the jar to achieve a smooth pesto consistency paste.

    Into the plastic wrap lined bowl put in the first layer of cheese,
    then the pesto, another layer of cheese, sun dried tomatoes, then the
    final layer of cheese.
    Wrap up and refrigerate for at least two hours or best, over night

    If I waited until I could layer this perfectly I'd never get this
    posted so here it is.

    I guess I should call it Rustic Goat Cheese Torte.

    Goat Cheese Torte

    appetizers

    6 oz goat cheese
    4 oz cream cheese
    8 cloves at least garlic, peeled, smushed; chopped
    I usually put in lots more
    1/2 cup pesto (at least)
    1/2 cup Sun dried tomatoes; chopped fine and
    one tablespoon of marinade
    black pepper freshly ground, salt
    decor, from fresh herbs, of; thyme, oregano, rosemar
    sliced baguettes

    Mix goat cheese and cream cheese, add the garlic. Taste. Add salt
    and black pepper if you want. Line a small glass bowl (about 2 - 3
    cups) with plastic wrap. Put about 1/3 of the goat cheese mix into
    the bowl. Top this with the pesto. Put another 1/3 of the goat
    cheese mix on top of this. Put the sundried tomatoes on this. Top
    with the rest of the cheese. Put plastic wrap over the top of this.
    Refrigerate for at least 2 hours, and up to four days.

    To serve, invert bowl on a serving dish. Carefully remove the plastic
    wrap. Decorate with herbaceous materials. Serve with baguettes. Keep
    out of the way of the devouring mob. Supposed to serve up to 20 - 25
    with other appetizers.

    You never joined the previous cook-ins, either, did you?

    Nan.... what I "passed" on was the goat cheese tort. I deleted
    several sentences about how I don't like goat cheese just before I
    pressed "send". Guess I shouldn't have.

    The majority of previous cook ins were held when rfc chat *was* an
    exclusive club. You were part of the "inner circle". I wasn't.
    People like me read about them the "day after". When rfc chat opened
    up to the unwashed masses - I joined in (I certainly don't see you
    there very much). For most of the virtual cook-ins I've known about,
    I've had other obligations on those days. I did, however, join the
    gumbo cook-in last year.

    Conclusion: I always look forward to virtual cook-ins, but I can't
    always join in. If a virtual cookin is held on a day when I have no
    social obligations with real people, I'll do it again. It was fun and
    the result was delicious. Maybe I'll have a laptop by the next time,
    so I can cook and type in the kitchen instead of having to run into
    another room to get to the computer.

    Heh, that's what I do. I have a little folding table I do my prep
    on up here in front of the computer, then run downstairs to cook.

    counter tops, I added more space so that I could pull up a stool and sit
    down-- I can access my large computer from the laptop any time I like. I
    ordered a swivel so that I could turn it 360º. Guess what I do? I run

    LOLOL! That's funny. Your computers aren't set up to file share? I

    BTW: By the sound of my computer, I should hop on it too... this one
    sounds like it's being strangled right now. It started last night and
    I thought the noise would stop once I turned it off and let it cool.
    Noooo. The sound started as soon as I rebooted. These hard drives
    don't last worth a tinker's damn anymore. This one is barely 2 years
    old. I'm beginning to think an extended warranty will pay for itself.
    The computer is not even 3 years old and the second HD seems to be
    going south after about 18 months. I've got remote back up (mosy)
    backing up every hour or so, but am thinking of upgrading my storage
    space from free to pay so I can back up literally everything now!

    Yes, I can access, his main, my main, the laptop and another laptop -- all
    files are accessible on all computers. It's just a habit to run to the
    biggie. I've ordered a adjustable stand for the 17" kitchen laptop which
    will make it easier for me -- I dislike very much the computer sitting flat;
    maybe that's why I go to the big computer.

    external hard drive - 160 GB - but I should get a bigger one. This is done
    automatically or manually, my choice. Takes about 20 minutes. A little
    3x5x1/2" (about) - can take with you.

    enough, if you need it. I did well with the free storage until my

    enough, if you need it. I did well with the free storage until my
    computer began to gag. I'll upgrade my service if a good tower
    vacuuming doesn't help.

    Like quite a few programs, the intro is free, then dropped after a
    while. My antivirus program, which I've had for years, was initially a
    freebee but has moved through stages and is now $30. Worth it, though.
    Verizon (my ISP) offers limited free online storage (at least for
    now!!).

    that's a good thought! I should check comcast to see if they offer
    free storage. I know they give us space for a web page.
