got some blintzes and some raspberries....

  1. ....what's the best way to make a sauce out of the
    raspberries, so I can pour it on top of my blintzes? (The
    raspberries are flash frozen.)

    Thoughts? Ideas? Suggestions?

    Frozen berries are already a sauce... anything you add to
    them will only make them less. So what kinda blintzes you
    talking... cheese, potato... maybe garnish with a dollop of
    sour cream, then a dollop of your berries... a flute of Dom
    P. Brut to tickle yer snoot.

    You could thaw the berries, drain the juice and thicken it
    with some cornstarch or arrowroot powder (cook it), then add
    the berries back for a pourable sauce type thing without
    actually cooking the berries. Me, I'd sweeten the juice a
    bit before thickening it. JAT.

    Just defrost the Raspberries, crush half of them, add sugar
    (for juicing) mix together and serve.

    Or whizz them to a purree in a blender/food processor and
    add sugar to your taste. and whizz somemore.

    Or melt some jam raspberry apricott strawberry...what
    ever... in a sauce pan on the stove over gentle/low heat
    and use that.

    After pureeing them I would pass the puree through a
    strainer to remove the seeds, add sugar to taste and maybe a
    little lemon juice if they needed tarting up. I've seen
    Jacques Pepin strain raspberry puree by pouring it in the
    strainer and tapping the strainer repeatedly with a wooden
    spoon. He claimed the seeds were less likely to clog the
    strainer this way than if it was pushed through with the
    back of the spoon.
