I threw it in the pot

  1. after a long day of multiple doctor appointments, lab tests, christmas
    shopping and grocery shopping all punctuated by long drives in tons of wet
    snow I got home and realized that the best way to get David to shovel was to
    make dinner.

    In a pot went
    1/2 chopped onion
    2 cloves smashed garlic
    1 can great northern beans (should have been 2 cans, but I only had one)
    1 cup chopped carrots
    1 cup chopped potato
    1/2 cup chopped kale
    1 can diced tomato
    3 cups vegetable broth
    penzeys greek seasoning, salt, pepper, fresh grated ginger, a cinnamon stick,
    a little sage, tarragon and a pinch of dill.

    It's simmering on low.

    I also made cornbread.

    sounds good! I just made up a pan of macaroni and cheese that I'm
    cooking in an hour or so before Rob gets home.. I am quite tempted to
    eat it right out of the pan right now, though 🙂

    Here is what I don't understand and I never have.

    Why are savory recipes written as above.

    What the hell does one do with the leftover, onion, potato, carrot, Kale.
    Vegetable broth comes in 16 ounce cans - 3 cups, Hmmmm is that 1.5 cans?

    I have never been able to pick just enough carrot to fill 1 cup, and If I do I
    end up munching out in the rest.

    The measurements are approximate and determined after the fact. I measured
    nothing as I was putting it together except I kept track of how much water I
    added then added the appropriate amount of "better than bouillion" vegetable
    stock goo. I used mini carrots chopped in half and little baby potatoes and it
    looked to be about 1 cup each.

    All the extras went back in the fridge/pantry.

    you'll have to wait til tomorrow, as everything is pretty much shoveled now,
    but it will continue snowing.

    All I want to do tonight is eat my dinner and then work on my new mad crochet
    skillz (I can now crochet a cable 'knit'. I'm so bad ass.)

    David doesn't like homemade mac and cheese, so i have it all plotted out...he
    leaves for new orleans on the 26th, I've got 2 days before I have to fly down
    there to meet him....mmmmmmac and cheese....

    I tried the Calorie Commando's recipe a month or so ago for baked Macaroni
    and Cheese. It was SO good. The calories weren't reduced that much, but
    the fat was lowered quite a bit. Thought I'd try it as a hoot and it was
    good.

    I just mentioned that it was getting to be mac and cheese weather and he just
    said "i don't think I want that" with more prodding he admitted he didn't like
    it all that much. I was a little sad that he ate it all last winter without
    saying a word.

    well, I just took mine out of the oven. have a plate 🙂
    I make mine with broccoli, because that is how my mom always made it.
    kidlet picks out all of it 🙂 (she has started to revolt against cokked
    veggies; I have no idea why :< )

    I threw in a pot my own version of 'Hamburger Helper'. Cooked macaroni,
    browned ground beef (cooked with onion & garlic), tomato sauce, ground ancho
    chili powder, ground cumin, mexican oregano, a little cayenne pepper for
    heat, salt to taste.

    Thankfully there is nothing to shovel here. It's just rainy.

    Isn't it funny how that happens. I've been married nearly 20 years and I
    knew steak wasn't my husband's favorite so I seldom make it for the family.
    I might make one for my lunch now and again. One day my brother and I were
    reminiscing about the delicious steak our folks fixed when we were kids. I
    said how I could count the amount of steaks I've had in the last 5 years
    probably on 2 hands. My husband over heard the conversation and said you
    can have steak for dinner any time you like. I reminded him he doesn't like
    steak. He said when you grill a steak throw a couple hot dogs or sausages
    on and I'd be happy. I said, "Really?!" and he said, "Really."

    meat I have. A little balsamic vinegar, and I can eat the whole damn
    potful 🙂

    Always good. Mine is a one-pot meal, brown the ground beef, add the
    rice and cook it a bit, dump in the vegetables and tomatoes along with
    some beef broth, let it simmer 20 minutes or so.

    My girlfriend doesn't like it, but for a reason I find completely
    irrational: She likes macaroni and she likes cheese, but she considers mac &
    cheese to be "white trash food."
