Knife set suggestions

My advise as a real knife nut is don't buy a full set of knives as half
won't get used. Get a chef's knife and a paring knife to start. Then if you
eat a lot of roasts, turkey, ham etc get a slicer and perhaps a utility
knife something about 6" long. As for the Chef's knife get something in a
length you will be comfortable with and chef's knife covers the santoku
craze as well. If you eat a lot of hard crusted breads or eat a lot of cake
get a bread knife. My favorite is the Shun Classic line for the bread and
paring for the rest I use Chinese cleavers for the most part but do own
about 40 different Japanese knives from various manufactures and some custom
made in every style there is. I suggest you go to Bed, Bath & Beyond also
and handle the different brands they have as well as William Sonoma then go
to Cutlery and More on the net and buy what you want there as you will save
some money even with shipping. You also need to think about how you will
keep them sharp (steel doesn't sharpen a knife it just hones the edge). I
know a good sharpener if you don't want to learn how to do it yourself (it
isn't hard at all) that is reasonably priced with fast turn around times.
You will have to ship them too him as he is in Pennsylvania. He is the only
person I would allow to touch my knives other than myself.

Check out a restaurant supply store. If they sell to local cooks and
chefs you can probably find something that is serviceable.

I don't know about Linens & Things, but BB&B sends me more coupons than I
can ever use. 20% off one item. You can use multiple coupons together (one
for each item), and it doesn't matter if they're expired. Their prices are
pretty good to start with, and the coupons make them more so. If you're not
on their mailing list yet, email me privately, and I'd be happy to send you
a few.

As far as the knives, I wouldn't buy a set. Look at the knives you NOW use
most often. You can probably narrow it down to two or three: A 10" chef's
knife, an 8" carving knife, and a paring knife. I use Wusthoff "classics", I
think they're called, because the handles felt right for me.

I got my husband new knives for Christmas last year... I've always been
told that how comfortable the knife feels in your hand is very important.

We were in Bed, Bath, & Beyond last year and he happened to pick up an
Anolon Advanced knife and commented on how good it felt.

I was off and running purchasing him new and badly needed knives!

Bottom line.... go to the store of your choice and see what feels right for
you.

Agree. I recently bought a 3-set of Henckels there.
The website price was less than the shelf price, so they gave
me the website price, plus the coupon discount (I think 20%).

That's exactly what I've got. Some people like the stubbier 6" chef's knife,
but I never found I could get enough leverage with one of those, especially
for dealing with tough stuff like squash. You can always make a big knife
smaller, but you can't lengthen a small knife.

By the way, I've never hefted various cleavers in a store to see which one
felt best, and I've only owned one, received as a gift: Henckels 6" model
31734-150. Nice balance. I use it mostly for hacking thick vegetation into
my compost bin. 5 years of this work and it's still in great shape.

Of course I like my Wustof-Trident's, but dollar-for-dollar, Cook's
Illustrated rates Forschner-Victorinox above all else. You can generally get
the best prices locally at restaurant supply houses.

Cutlery knives? Although I bought a Shun santuko ,and an
inexpensive cleaver for heavier tasks, when I resharpened the old
Chicago Cutlery, and cleaned up the handles, I realized they did what I
wanted for the most part.

The Shun is a nice knife, but pick one up, and see how you like
the feel. The handle is small, and D shaped, on my santuko.

I don't think that is the set I have. They were a gift from a relative
decades ago.
