low fat cheese in a souffle?

  1. My father is having trouble with gout and has to give up a lot of
    protein sources for a couple of months. Eggs are ok, so I was thinking
    souffles, but his dairy products have to be low fat. Does anyone have
    any experience with making souffles with skim milk and low fat cheese?
    Do they work? Do they come out like a real souffle, or like a poor
    imitation, or like something totally disgusting that no one would want
    to eat?

    Regarding gout:

    Here are a few hints:

    1. See the doctor - he pay prescribe ALLOPURINOL.
    2. Reduce or cut out coffee and alcohol (they are both very dehydrating)
    3. Double the amount of water he's now drinking.
    4. Dried cherries or cherry juice will help.
    5. Do a google for "purines" the cause of gout.

    Yup. Different folks have different experiences with gout - causing
    foods...on a *strict* gout diet I was allowed protein - wise only small
    amounts of boneless chicken breast and bacon (the bacon recommendation is
    strange, but I've seen it on several gout diet guideline lists...)...

    Basically cut down on all rich foods. But some healthy vegetables have high
    levels of purine, e.g spinach, legumes, cruciferous vegetables can be real
    no - no's on a gout diet.

    Best to have the doc do some blood work, too (he'll have to in order to
    prescribe Allopurinol in any case). Allopurinol is one remedy, colchicine
    is another one. Colchicine is somewhat toxic and can cause severe stomach
    upsets...

    It's a crummy and painful malady (even the name is ugly) but with medication
    and some diet modifications it is fairly easily remedied. Dropping some
    weight and getting exercise really helps too. And WATER WATER WATER...can't
    stress that too much. Drink as much as you possibly can, it's good for yer
    system in any case.

    Black cherry juice concentrate can be bought at any health food store, the
    juice itself too at decent grocery stores. Make SURE that the cherry juice
    you get is 100% pure cherry juice, a lot of stoopidmarket stuff labelled
    "cherry juice" is mostly apple juice, just check the label. Also be aware
    that black cherry juice can have a *severe* laxative effect (TMI)...

    I use nothing but skim milk, and it's fine in cheese souffle. I don't
    know about low-fat cheeses, because they aren't anything I buy - but if
    I were you, I'd try some skim-milk cheeses first and see how those go -
    Gouda is one that is almost always skim-milk based.

    For those who have never experienced gout I hope you never do 'cause the
    pain is unimaginable. The cause is uric acid in your system will actually
    start to "grow" crystals inside a joint.

    For me the best relief is/was a high dose of the now removed Vioxx. I
    managed to save some for emergencies.

    I know this may sound gross but the best indicator of your fluid intake is
    the color of one's urine.

    The local cherry farmers can't keep their sour cherry juice is stock because so
    many gout sufferers have found it to be almost a miracle drug.

    Yes. I too suffer from gout and the black cherry juice is good. I've
    only bought it from the health food stores so can't comment on the
    supermarket but I have to admit, I've never looked for it there either.
    I've been prescribed to Indomethacin 50MG capsules and that is the
    miracle drug for gout. Soon as I feel the *tingle*, I start taking it
    and I've never had the condition come back. Thank goodness to say the
    least.

    The pain is crazy. Simply no other way to put it. Before I had this
    prescription I felt that my world was coming to an end and I couldn't
    wait for it to come. The pain was just too much to take.

    You can't exaggerate the pain. I thought I might have been bitten by a
    poisonous spider on my big toe joint. It was red, hot, and swollen,
    looking like a bunion.

    My. Dr. hypothesized it might be due to all the shrimp I ate while on
    vacation. Allopurinol seems to be working well for me.

    Where is the pain? For some reason I always thought it was in the big toe.

  10. Gout sucks. The only thing I've ever had that hurt more was a kidney
    stone. Allopurinol is good but it takes a while and you have to keep
    taking it.
    No more liver, sardines, anchovies for me. It's the only diet in the
    world that tells you to eat more refined carbohydrates and less whole
    grains!

    On the other topic try lowfat/nofat evaporated milk. You get the
    "creamy" without the butterfat, and
    Kraft makes pretty good 2% milkfat cheeses.

    Not necessarily the big toe although it can manifest itself in any joint the
    extremities such as the toes and fingers are the usual places. I think it
    has to do with the available blood supply being able to absorb or better yet
    re-absorb the uric acid crystal(s)

    For me "freezing" the joint is about the only relief save the medication.

    No, it's not gross, and it is a VERY important health indicator to
    keep an eye on. Gout sounds awful. Hope it doesn't still affect you.

    I broke my collar bone a few years ago. It was handy for that. That is one
    injury that I don't want to repeat. If it wasn't for morphine I would not
    have slept for about 7 weeks. Come to think of it, I only slept from the
    time the morphine kicked in to the time it wore off about 4 hours later.

    My mother suffers from kidney stones on a regular basis. About ten years
    ago she had her parathyroid glad removed and the doctor assured her that
    she would never again have a kidney stone. She had one two years later.

    They think they were doing you a favor with that GD morphine pump. The
    minute you fall asleep you stop pumping. The morphine wears off and you
    wake up - then you have to pump for another 2 hours until you get enough to
    go back to sleep - about that time they come in to wake you up to draw
    blood - No wonder people die in hospitals

    Yes, the big toe is where I get the pain and it swells up like a tennis
    ball. Other people do get it in the knees and hands, or just about any
    joint as you say. But the pain goes throughout the body and just never
    seems to let up.
