Ya know, I stuck in the meat thermometer but I never looked at it...
just roasted it at 325ºF. for 25 minutes per pound (was 8 1/2 lbs)...
let it rest 30 minutes. Was perfect. I typically roast beef by weight
rather than temperature... even the best meat thermometers lie when
going for rare or near rare centers.
The best part was I bought it on a BOGO sale, buy one at $3.99/lb get
another same weight free... so cost only $2/lb. I still have another
big meat in the freezer.
