  1. i've decided to make a few gift baskets for the holiday. i need a great recipe for banana bread,

    Grandmother's Banana Nut Bread

    favorites, bananas, quick breads

    1 cup cooking oil 4 eggs 2 1/2 cups sugar 4 cups all purpose flour; sifted
    1/2 teaspoon salt 1 teaspoon cinnamon
    2/2 teaspoon allspice
    3/4 cup buttermilk 1 tablespoon soda 6 ripe bananas; mashed 1 teaspoon vanilla 1 cup pecans; chopped

    Sift flour and measure. Resift again with salt, cinnamon and allspice. Set aside. Mash bananas.
    There should be about 3 cupfuls. Set aside.

    Measure pecans and then chop fine. Set aside. Grease the bottom of 3 8x5 inch pans, line them with
    waxed paper and grease the bottom again.

    Measure buttermilk and place soda beside buttermilk.

    Beat eggs and stir in sugar and oil. Beat until creamy. Sift soda into buttermilk and stir with a
    fork to blend. Add to creamed mixture alternately with flour mixture and mashed bananas.

    Mix well and add pure vanilla and chopped nuts. Mix and divide batter among the pans selected and
    prepared. Level batter and make sure corners of the pans are filled. Bake at 325F about 1 hour or
    until done. Actual baking time will vary with the size of the pans. For example, 7x3 inch pans take
    about 45 minutes to bake.

    When done, place loaves on rack to cool 5 minutes before turning out of the pans. Allow to cool or
    serve warm. Cool completely before wrapping to freeze.

    Tracy's Note: It is very important to take the loaves out of the pan to cool, unless you like
    seriously sticky banana bread; I learned this the hard way. 🙂

    Yield: 2 loaves

    This is my mom's Banana Nut Bread. Tried, true and absolutely delicious! I wrote it down as she
    dictated it:

    Sift 2 cups flour into a large mixing bowl. Add 1 tsp. double-acting baking powder and 1/2 tsp.
    baking soda with 1 tsp. salt. In a separate bowl, cream
    1/2 c. butter well with 1 cup sugar. Blend in 2 eggs and beat well by hand. Add 1 cup mashed bananas
    and mix well. Blend this into dry ingredients until thoroughly blended. Fold in 1/2 c. chopped
    walnuts. Pour into greased bread pans. Push the batter into the corners, having the center
    slightly hollow. Bake at 350F for 60-70 minutes or until the loaf is cooked through. Use the
    "toothpick comes out clean" method in the center to test for doneness. Cool well before slicing.

    In a large bowl, sift ONE CUP of the flour along with the sugar, baking powder, baking soda and
    salt. Added the mashed bananas, shortening and milk. Beat with a blender on low until blended, then
    on high for about 2 minutes. Add eggs and beat until well blended. Add nuts if you're so inclined.

    Pour batter into a 8x4x2 loaf pan and bake at 350F for 50-55 minutes or until the bread passed the
    toothpick test. Cool in the pan for 10 minutes, then remove to a cooling rack.

    Off beat, but tried and true....from an old post of mine:

    This comes from a book I picked up used and never seen elsewhere: Bread of the World by Mariana
    Honig (1977). The bread has the advantage of being not too sweet and also wheatless. To make this
    especially good, I grind white *basmati* in my KA grain grinder. You could do it in a spice mill (Braun-
    type coffee grinder). I used to make cream of rice that way out of brown rice for breakfast, and
    while not as fast, it is still possible. Jasmine would probably be excellent, too. I've never made
    it without the aromatic rice, but I still think it's a useful recipe

    Liberian Rice Bread preheat oven 350 liberally butter 9"x5" bread loaf pan
    Mix:2 cups cream of rice 4 teas. baking powder
    1/2 teas salt
    2/3 Cup sugar

    in another container: 2 cups of mashed bananas (and yeah, use the near-rotten for best taste) 2 eggs
    1 cup milk (skim okay)
    3/2 cup veggie oil (not olive)...I use peanut.

    Mix this and add to the dry, combine, pour into pan, bake about one hour. I find the top edges brown
    a little fast and put tinfoil over it if this starts. Let sit 5 minutes before de-panning. Let cool
    covered in a towel....we always have some hot. A touch of spice (nutmeg, e.g.) would probably go
    well. I'm thinking of using a bit of maple syrup.

  7. This is my recipe and the only one I use. Nuts can be added, but remember to dredge them with some
    of the flour and fold them in last.

    Sorry, forgot to write that. It goes in with the eggs. I'm a retro guy and have all of my recipes on
    3x5 cards... 😉

    I'm guessing most any recipe is swell -- mine has sour cream in it along with the butter. The real
    secret, though, is the bananas -- you'll want them to be ripe just this side of fruit flies.
