FWIW, you can shift down multiple gears with Shimano also.. I do it everytime I ride.
56 "sounds" about right for your height, but there are MANY other factors to look at. Manufactures differ in their geometry, so top tube length, among others can be different enough that you could have a fit problem. Probably nothing you can't work around with carefull choice of stem length however.
I suspect you know, but you're about to be on a bike that doesn't have nearly the upright riding position you're used to, that can bring some things to the surface with regards to fit and comfort.
I have no experience with either frame, but I've never read anything bad about Look.
