Well this last weekend I got tired of the electric smoker and purchased and assembled a char-griller with the side fore box. The knock-out panels ain't as easy as they indicate. Whew!
I also picked up a chimney starter and some lump. I'm sitting with a large bag of red oak from the Santa Maria area. :-) It does make great tri-tip.
I just finished seasoning the grills and parts and intend of using it this weekend for some tri-tip and maybe some chicken - I'll wait for a hoard of people before doing a whole brisket.
If anyone has one of these monsters - I would be delighted to get some advice, suggestions or comments.

Actually I really think my Son in Law is going to be as or more excited than I am. I've been seasoning it for 2 days and it should be ready to go this weekend.
Actually # 5 (the best friend of daughter #4 who I call # 5) is bringing her soon to be fiancée. I think wedding plans are in the future there as well - You know how it goes........

I am pretty interested in it. I can't wait to hear results from his 'test cooking'. I may have to just buy one myself if it's a success. I'm electric smoker impaired myself 😉and it came with the house.
