Oh Gawd-A surprise party

  1. Friday night my mother is throwing a bash at Illini Country Club for my
    father's birthday. The club's food is NOT good (they've been through
    hundreds of chefs since I was a kid) and mother is trying to get us all to
    bring something that we like. Our favorite recipe so to speak. My first
    thought was to call a caterer in Springfield Illinois to deliver but I
    think I want to take something. My father is flying in from West Van
    tomorrow and my 'pain in the ass' child gets in from NYC Friday morning. I
    do not have a lot of time. I need something that travels well (for about 2
    hours). The club will be full of big fish in a little pond if you get my
    drift, about 200 people in all. Any ideas? I have no idea what to take
    that will feed a Godzillion people. I *just* found out about it today and
    I'm a bit terse about the short notice. I'm thinking one of my fave apps,
    Frog Eyes. It's the kosher dill pickle wrapped with cream cheese and deli
    meat. Or, I could make a huge batch of tuna or chicken salad and buy some
    mini buns. I'm lost here. Any of you caterer types out there know what to
    do?

    Oh, the one thing the club does well is smoked salmon. There will be 3 of
    them on different tables. Mother is making <<<shudder>>> all of the
    desserts.

    You don't have to feed everyone. Even your [obviously scatterbrained]
    mother knows that your favorite recipe is not for 200.

    Country club setting means well-stocked bar. Smoked salmon and dessert
    taken care of. Party not your responsibility. Your father's birthday.
    Seems to me you can just sit back, relax, and try to recall something
    your father has told you he likes. If nothing comes to mind, the
    appetizer you mentioned will keep well for a two-hour drive. -aem

    FWIW: I just went to a small (25) surprise party at the Oahu Country
    Club and this is what I remember they offered and this CC is known for
    its good food.

    Baby lamb chops in a small amount of sauce, small size of semi sweet
    rolls with smoked pork and hoisin sauce, 2 huge platters of sushi,
    spring rolls cut in hors d'oeuvres portions, smoked salmon with all
    the trappings..and that's all I remember. It was very good and yes
    there was an open bar and I think everyone enjoyed them self.

    An open bar is a given at this party. I think I'll just take something
    simple, like the Frog's Eyes. The food at Illini is really bad, or at
    least it used to be. The main course is roast beef (naturally). I'm sure
    it will be like shoe leather. There will also be a roast chicken with
    rosemary which may be edible. Other than that, the rest is up to us. It's
    the big '70' for my father. Gawd... we all be getting on in years.

    I don't think it's a pot luck. I think it's for father's favorite foods

    Honestly, I would be temopted to pick something up at a local deli
    (cheese or fruit tray, etc.) and call it quits. With such short
    notice, you're certainly not obliged to cook.

    I'm in St. Louis. Yes, the Illini is in Springfield (we call it
    Springpatch) IL. It's the state capitol and my family is prominent there.
    I have caused mucho embarrassment in my hey day. I'm a bad child 😉 My
    parents home is right across the street from the club. I've staggered home
    from there many times... especially when doing the tennis... never mind.

    I'm originally from Bloomington and have spent many a day/night/weekend
    in Springfield. I now live in California, and when I go back "home' am
    always expected to cook something "exotic". (That means not fried or
    cooked to mush)

    Last summer I made the super easy Chinese Chicken salad made with
    cabbage, chicken and Top Ramen. You would have thought I was a world
    class chef.

    This is so easy, tastes great and travels well. As you can see, the
    proportions are rather vague...you just have to taste as you go.

    Hope the party is a grand success and gives you lots of things to
    comment on in future mailings.

    shredded cooked chicken
    sliced green onions
    slivered almonds

    2 pkg chicken flavored Top Ramen
    toasted sesame seeds

    Dip ramen noodles in hot water until soft. Drain well.

    make dressing of
    6 T rice vinegar
    3T cider vinegar
    3T salad oil
    1T sesame oil
    4 T sugar
    seasoning packets from Top Ramen

    pour dressing over cabbage mixture and toss well. Add noodles. Let sit
    for several hours before serving. Add almonds (or sunflower kernels)
    before serving

    would kill for..is a BREADED PORK TENDERLOIN SANDWICH. I love those
    things beyond all reason and have never seen them on any menu in
    California.

    Hmmmmm...come to think of it, Steak'n'Shake burgers were pretty darn
    good, too.

    Oh, dear....I hate to admit it, but there's nothing like good ol' junk
    food to make a girl feel 16 instead of 72!!!!!!!

    growing up...I've lived in Chicago for almost 30 years now and I haven't
    been able to fine *one* over the years here. They don't even sell the
    frozen tenderloins in the store. I could order them from the Amana Meat
    Company in IA but they are *so* expensive...

    My friends from Iowa and I are always moaning about how we miss them...

    A very large palter of Tomato and fresh mozzarella salad - drizzle with EVOO and
    Balsamic sprinkle a chiffonade of fresh basil.
    A large platter of good Italian Antipasti. {lots of decent olives ;-)]

    Both can be assembled at the location

    If warm A large pan(s) of baked Pasta will travel very well in a cooler - right
    from the oven on a bed of newspaper and close the cooler.

    area...

    Steak 'n Shake is alive and well here in St. Louis. A doctor used to own a
    SnS franchise in my home town. He owned a place called Thirkelow Meadows,
    right across from our piddly little place. Not where we lived but where
    we kept the horses. His stud used to jump the fence after my mare.

    Hi, Jillie, Good to see you here. I never know when and where I will
    find you "out of context". It is still cold in New York and Marcel is
    still wearing his warmy socks when he comes to visit. :o) The recipe
    sounds good and I will save it for a summer lunch, but I may skip the
    chicken and use more cabbage instead. Hugs, M

    Someone who lives in New Jersey just told me that she had a party
    recently and she went to The Red Lobster in her town and bought
    platters of wonderful shrimps as part of the food. She said that it
    was quite inexpensive, but she only had about two dozen guests and you
    will have ten times as many. Do you have a Red Lobster Restaurant
    near you? If so, call up and find out whether they will prepare such
    platters of cold shrimp with cocktail sauce and lemon wedges for you.
    I do not eat shrimp, but I find that other people like them.
