Interesting idea, actually.
Rather than made-to-order, why not offer several choices,
pre-made? That way, the salad could chill and flavors meld.
Have samples to taste-test, of course!
My sister likes kitchen-sink pasta salad -- made with cheese
tortellini and artichoke hearts and you name it, it's in
there. Full of protein and hardly any pasta, actually.
I like pasta salad on the plain side -- red onion, green
salad olives, roasted red, yellow, orange and green bell
peppers, maybe some grated or crumbled cheese, and Italian
dressing (but still keep the pasta dry). And, I like the multi-
colored corkscrew pasta.
You could have a zesty mexican with cheddar, olives, onions,
etc., and a seafood with shrimp, crab and celery, etc. You
could do a Greek, Italian, vegetarian, etc.
Let us know what you do and how it goes. How did you end up
doing the made-to-order idea?. It sounds like a great idea!
I would buy some if the price was reasonable. How much will
you be charging?
