  1. Does anyone have a recipe for pera? (It's an Indian sweetmeat, similar to
    burfi but made in round balls rather than diamonds, with a little sprinkle
    of ground pistachio on the top.) I have condensed milk, dried powdered milk,
    sugar, butter (which I can clarify for ghee if necessary), cardamoms and
    pistachios, but I don't know quantities or method. Google turns up lots of
    burfi recipes, but nothing for pera 🙁 Can anybody help?

    Have you tried to make it without cooking. It can be easier. The
    problem is that it has to remain refrigerated,, feels sticky otherwise.
    I have a recipe for Almond Peda at the website that doesnt use dry milk
    at all.

    1. Dry Milk: 2 Cups
    2. Powdered Sugar: 1 pound
    3. Unsalted butter : 2 sticks
    4. Almond Butter: 1/2 Cup
    5. Ground Pistachios: 1/4 cup
    6. Cardamom seeds:1/2 teaspoon

    Method
    Sift powdered sugar and Dry milk together. Mix in butter and almond
    butter at low speed. Mix in Pistachios and cardamom seed. Form the
    patties store in refrigerator. If you don't have Almond butter use
    Peanut butter.

    Let me know how it turns out

    Can you skip the reduction and start with canned condensed milk
    instead?

  4. The second part of the recipe does reduce the reduction time. It
    basically uses dry milk and then adds a little bit of regular milk and
    whipping cream. It also uses confectioners sugar that has a bit of corn
    starch to help binding.

    Quicker method
    We will use dry milk and Heavy Whipping cream to reduce time for milk
    reduction or making Khoya

    Ingredients
    1. Dry milk: 1½ Cup
    2. Heavy whipping cream: ½ cup
    3. Regular milk: ½ cup
    4. Confectioner's Sugar: 1½ Cups
    5. Cardamom seeds ground: 1 teaspoon
    6. Crushed Pistachio nuts: 2 Tablespoon
    7. Toasted sliced slivered almonds: 2 Tablespoons

    Method
    Step 1: In a heavy bottom pan mix ingredients 1 through 5. Heat it o a
    near boil 180º F. Turn heat to medium low maintaining near 180º F.
    Cook for about 20 minutes to 30 minutes. Continuously stir to prevent
    scorching. It should look like a ball of dough consistency.

    Step 2: Let it cool off so you can handle it. Now make about 1"
    diameter balls. Press down into patty shapes.

    Step 3: Sprinkle pistachios and almonds. Press down. Let the dish cool
    and store in the refrigerator.

    Back to what you said, I guess you could use condensed milk, but then
    you have add drymilk and somesort of binder, such as bisquick. I have
    never done it. Try your hand at it by combining dry milk condensed milk
    a bit of bisquick. If it works let me know and I will add to

    My first attempt used condensed milk, dry milk and butter done in the
    microwave. Didn't add sugar, because of the condensed milk being already
    sweetened. The flavour wasn't sweet enough, the texture was - sort of chewy.
    Not right at all. Next attempt will include sugar, and be cooked in a pan.

    (Luckily I now have a week to get this right 🙂

  6. Confectioners sugar and drymilk mix very well. I will try cofectioner's
    sugar and not granular sugar.. Let me lknow how it turns out..
    Microwaves heat fat molecules and sugar molecule faster than the rest..
    I don't care to use microwave for sweetmeats. One week??
