  1. I would like to make prescutto. I cant find fresh pork bellies in my
    area. Does anyone one know of a web based bucther that sells pork
    bellies via the mail?

    I take it you mean prosciutto? That's made from the
    back leg (ham), not the belly. It takes at least a few
    months, and really good results require a year or
    more. If you try making it, I recommend doing it
    boneless.

    If you really want to cure belly, you'll end up with
    bacon, pancetta, etc, depending on the recipe. It
    can be quite good and it's much, much easier to make
    than prosciutto.

    In any case, I can recommend Niman Ranch. I've bought
    jowl, fresh ham, and belly from them and it's all been
    very good.

    very lean meat.

    Prosciutto is the Italian word for ham. In the US it is generally taken to
    mean a specific kind of ham, dry aged and cured, such as Prosciutto di
    Parma.

    Did you try a Chinese/Vietnamese or Mexican grocer? They normally stock
    pork bellies. Prosciutto isn't made from that though.
