Quick Fix (lunch, dinner, dunno yet)

  1. The discussion of mac & cheese (Kraft or otherwise) set off a craving. So
    at this point I'll either make some mac & cheese with diced ham added, and
    yes, I top it with lightly buttered breadcrumbs and bake it OR... (drumroll)
    the Bisquick chicken pot pie recipe. Yeppers, canned cream of chicken soup
    (store brand), frozen (thawed) mixed veggies. Oh, and I don't have chicken.
    So I snagged a couple of cans of chunk chicken breast in broth. Sue me 😉

    Bravo! Bravo!! Chunk chicken canned in a broth... canned soup...
    frozen (thawed) veggies... Bisquick chicken pot pie.

    I have made the Bisquick chicken pot pie a number of times. It's
    pretty good! I make it when I have leftover chicken to use up.

    I like the chicken pot pie recipe, too. It's good (without the "pot pie"
    part) served over rice as a quick main dish. I always keep a couple of
    cans of chunked chicken around.

    When I want "homemade" veggie soup quick, I use canned tomato soup as a
    base, add the frozen mixed veggies, nuke a couple of potatoes and chop
    into the the mix, and add a little butter and S&P.

    I'm all for using what's out there and doctoring on it a bit. Emeril gets
    paid to stay in the kitchen all day. I don't anymore. For me, cooking 1 or
    2 meals a day, 365 days a year is way beyond "hobby" status. Most of the
    time I'm looking for quick, easy, and tasty.
