I bought some quinoa (white) at Whole Foods Market yesterday. There is a
slew of recipes on the Whole Foods website for quinoa but I found this
one in the archives of the St. Louis Post Dispatch and it'll be dinner
tonight.
Salmon, Quinoa And Corn Salad
SALMON, QUINOA AND CORN SALAD
Yield: 2 servings
1/2 cup frozen corn kernels
1/2 cup quinoa, rinsed in cold water
1/4 cup frozen lima beans
1 cup water
1 medium tomato, cut into 1/2-inch pieces (about 1 cup)
1/2 to 1 teaspoon ground cumin
2 tablespoons low-fat vinaigrette (uh-huh, lowfat my rear end)
Salt
Freshly ground pepper
Olive oil cooking spray
1 (3/4-pound) salmon fillet
1 cup fresh spinach leaves
2 tablespoons chopped cilantro, optional
Combine corn, quinoa, lima beans and water in a saucepan; bring to a
boil. Cook, uncovered, 10 minutes or until quinoa absorbs the water and
softens. Remove from heat. Stir in tomato; sprinkle with cumin. Add
vinaigrette and salt and pepper to taste. Toss well; set aside.
Heat a small, nonstick skillet over medium-high heat. Spray with olive
oil, and add salmon. Sauté 4 minutes; turn and sauté 4 more minutes or
until done. Add salt and pepper to taste.
To serve, arrange spinach leaves on 2 dinner plates. Spoon quinoa mixture
over spinach. Divide salmon in half, and place a piece on each plate.
Sprinkle with cilantro.
