  1. Recipe: Chipotle Deviled Eggs

    10 large eggs

    1/4 cup finely minced onion

    1/4 cup finely minced ham

    1 tablespoon Dijon mustard

    2 tablespoons mayonnaise

    1 teaspoon chipotle pepper powder

    1/2 teaspoon black pepper, coarsely ground

    1/2 teaspoon salt

    PREPARATION: With a needle or a clean thumb tack, pierce the large end
    of each egg to a depth of 3/8 inch. This helps center the yolk. Place
    eggs carefully in a large kettle with at least 2 quarts cold water.
    Bring to a rolling boil over medium high heat. Remove the kettle from
    the heat, cover and let stand 18 minutes.

    Mince onions and ham very finely while the eggs are steeping. After 18
    minutes, rinse eggs with cold water and peel. Slice eggs in half
    lengthwise and carefully remove the yolk. In a small bowl, combine
    onion, ham, mustard, mayonnaise, chipotle powder, pepper and salt with
    6 of the egg yolks (discard the other four or save for a salad). Blend
    with a fork. Form mix into a round ball using a measuring teaspoon or a
    melon-baller and place into egg halves. A little slice off the bottom
    of the eggs before filling will help keep them upright. When the eggs
    are finished, sprinkle with a little extra chipotle pepper powder.

    Makes 20 deviled eggs.

    Nutrition information per serving: 51 calories, 4 grams fat, 3 grams
    protein, 1 gram carbohydrate, 0 fiber, 107 milligrams cholesterol, 134
    milligrams sodium.

    I've never heard of this technique (for keeping the yolk in the
    center of the egg when hard boiling). Of course I haven't really
    worried about it either ;-) If I was catering deviled eggs, then
    maybe...

    I've got a little gadget designed for the purpose. You sit the egg on it
    and push and a little pin projects just enough to puncture the shell.
    Stops the shell cracking during cooking.

    Sounds good and easy enough. I need to get some chipotle pepper powder.
